My Leftover Got A Makeover!

When you get hungry and poke around in
your fridge what do you usually find?
Is it last nights dinner?

But like most people you just push these leftovers
to the side because you don’t want to eat the
same thing twice.

Thus causing these leftovers end up being
thrown away along with your money.

So what do you do to stop throwing your money away?

You give your leftovers a makeover!
And serve them the next day.

I’m pretty sure that no one will mind eating leftovers
if they think you made something totally different
from the night before.

Here is an example using a roasted pork loin:

Lets say you made the pork loin as the main dish one day.
Well the next day serve it as a side dish.

This is what you do:
Get all the leftover pork loin you have and
chop it into bite size pieces.

Now get a large skillet or wok, stir-fry get any leftover
cooked rice with a bag of frozen mix veggies, and egg
and the chopped pork loin.

See you just made yourself some Pork Fried Rice, now
all you have to do is top it with some Soy Sauce and
its ready to serve.

You see you went from eating American style steak to
Chinese rice the next day, Wow!

I hope you liked that one because now it’s time for some beef:

You decided to make some hamburgers and ended up with
some leftover meat, which would rarely happen at my house
because we like to go “Double Style.”

This is what you do:
Get the meat and chop it until it resembles ground meat again.

Season the meat with some chili powder and taco seasoning,
to make some Beef Tacos.

Chop some lettuce, shred some cheese and you have your
own homemade Taco Bell.

If your not a Taco person go ahead add some beans, diced
peppers, tomatoes, and sauce to the meet in a pot for a
nice warm Beef Chili.

If you just let your imagination go crazy with food,
imagine the unlimited number of possibilities that
you can create with your left over meals.

Your family and friends will be amazed at your ability
to transform any meal into a new creation they will enjoy.

Besides this will save your money in your wallet so
you don’t have to throw leftovers away again.

I Found Lunch On The Floor!

I had to go to the bank because my ATM card is not working,
and even though I don’t use it, it’s always good for emergencies.

Everywhere I go I always go walking, since I don’t have a car
my chevr0-legs are the only transportation I currently have.
Also not a lot of people like to walk or have the time do to it,
I do 30 minute walk everyday it makes me feel good :)

Well after i walked out of the bank, which is inside of an Albertsons,
I found a $10. bill crunched up on the floor.

You know that feeling when you have no money, not even a dime,
and you find money you feel kind of rich?? Well that’s how I felt,
I felt like I could buy almost anything.

But then reality hit me, prices are going up in the stores,
restaurants, even school lunches and can’t really buy much
with $10 bucks.

So this is when I started to think
“What can I make/buy with these $10?”
A sandwich
Some Pasta
A Fruit Cocktail
???

But I decided to spend just $1 on some Ramen soups,
which were on special 5/$1.00, and thought I would make
5 different soups with everyday ingredients like cheese,
tomatoes, onion, sausage, or even lettuce.

So here is my first special recipe:
Cheesy Creamy Ramen Noodles.

What You Need:
1 package Ramen Noodles Beef Flavor
2 Cups water
1 TBSP sour cream
1/4 Cup cheese
*Salt Pepper for taste.

What to do:
In a small sauce pan pour the water and bring to a boil.

Once boiling add the noodles and bring to low/medium heat.
*I like to crush my noodles. They just last longer :)

Add the seasoning that comes with the pack and give it a quick stir.

Now you can add the cheese and sour cream. Stir and let boil for one minute.

Once it’s boiling pour into a soup bowl and let it sit for a while.
* I know most people drain the broth but I enjoy drink/eating it.

After you let it cool down for like a minute or two
the noodles should have absorbed some of the broth
making them a little thicker.

Our Blossoming Apple Tree

I had mentioned in a previous post, Ten from 2010 Blogs,
that I was going to be making some recipes from other bloggers.

Well that time has come to make the first recipe to open the year :)

Green Apple Salsa from How Sweet It Is.

Our apple tree is starting to blossom some pretty red, green, and yellow apples.

It’s Not Called Being Lazy

The Christmas lights, tree, and decorations are still up,
and it’s not because people are lazy.
It’s because of a tradition most Latin cultures do.

I knew we ate some delicious bread to
celebrate the coming of the three kings,
but I never really understood the full concept of it.

Here is a little bit of what I learned today:

In Mexico and other Latin cultures our twelfth days of
Christmas begin on Christmas Day and end on January 6th.
On the last day we celebrate El Dia de Los Tres Reyes Magos
with a Rosca de Reyes.

The Rosca de Reyes is a ring shaped bread
with plastic dolls baked inside. There is a
total of four (4) plastic dolls inside each one.
One of the dolls represents baby Jesus and
the other three represent the three Wise Men.
As tradition goes who ever finds the plastic
doll inside their slice of sweat bread must
give a party on February 2nd.

February 2nd is called Dia de la Candelaria
this is when who ever got a plastic doll offers
Tamales with Atole or Hot Chocolate.

Ten From 2010 Blogs

First of all Happy New Year.
Hope you all made your wishes,
kissed your significant other,
or wore something new to welcome the new year.

Now after days of celebrating, cooking,
and a migraine I am able to sit down and finish what I started.

I didn’t want to end the year with my top ten recipes.
Besides the fact that I don’t have them,
I didn’t want to end the year with something mine,
I want to give credit to some awesome blogger’s out there.

The recipes in this post are from blogger’s that have caught my attention with their healthy meals.
I will be making their recipes this year, 2011, and I will be writing my adventures in the whole preparing, cooking, and eating process.
So let’s start this year by cooking some healthy lunch recipes :)

Here are my Top 10 from 2010 Blogs

1. Blackened Chicken Alfredo -Raising Little Women
I am a LOVER of Chicken Alfredo. This is why I’m always on the search for a really great chicken Alfredo recipe. While I was doing some search for some Organization, somehow I came across this recipe. It caught my eye because the chicken has blackened seasoning on it which is something I haven’t tried before.

2. Spaghetti with Sausage – Mom’s Cooking Club
We’ve all heard of the traditional Spaghetti with Meatballs, Spaghetti with Garlic Bread, etc. I was kind of starting to get tired of these :(
So I typed Spaghetti into the almighty Google, the ninth(9) one down was Italian Sausage Spaghetti Recipe. I got curious as to how this will look, smell, and taste??

3. Egg and Cheese Toast – Happy Home Baking
There are two breakfast foods I can never get tired of,
1. Eggs – I can never get tired these.
2. Toast is the other one.
Now imagine both of them together Yum!!

4. Teriyaki Burger with Mango Pineapple Salsa – Annie’s Eats
Burgers are a must for family reunions or summer days. Mango is my favorite fruit and pineapple has been sneaking into my husbands daily diet. So I wanted to try this one because I love burgers and eating something healthy at the same time.

5. Simple Pork Tenderloin – For The Love of Cooking
I have only made Tenderloin once when my father-in-law bought it because it was on special for $5. Too my (first time cooking this big peace of meat) surprise it came out pretty…edible but simple. So this time he brings another one on sale (I hope it’s soon) I am prepared to make something chef like.

6. Green Apple Salsa – How Sweet It Is
My family loves making Carne Asada every other weekend in our backyard, where we have this lonely apple tree that we don’t do much with. Now this apple tree can give us some sweet tasting salsa the next time it blooms :)

7. Enchiladas de Pollo – Madeleine Cocina
I have never made this dish since I can cook and I have been craving some for a long time. I have eaten Chilaquiles which I make lazy style but I know it’s not the same thing :)

8. Turkey Taco Lettuce Wraps – Gina’s Skinny Recipes
Lettuce tacos have been in my mind since I first heard about them, but I just haven’t found the right recipe to try or one that really goes yummy in my tummy. This one looks like a promising taco so I am willing to give it a try.

9. Strawberry Blond Cake – Whisk Kid
Have you ever tried a Strawberry Blond from Cold Stone??? If you have you know how good it taste.

We have a box of Giant Pasta Shells sitting lonely in our pantry. I have never cooked this kind of pasta and I want to make it before it expires.

Breakfast Stuffed Peppers

I’ve loved eggs and tomato since I was nine years old,
I would always make Tomato Egg Soup, Huevos Rancheros,
and many other delicious recipes that included these two
as the main ingredients. I could have made a recipe book
with all the recipes I knew and I just might make one ;)

My Inspiration
Gina, from Gina’s Skinny Recipes, mentioned on Twitter:
“I get creative in long car rides. Just imagined a breakfast stuffed
pepper, stuffed w eggs, sausage n cheese. What do you think?”
I told her it sounded like a good idea so I wanted to try it too.
Five days later I made my own Breakfast Stuffed Peppers using
Scrambled Huevos Rancheros topped with a tomato sauce.
It was so delicious that when I cut the pepper to take a bite
the sauce drizzled out…it was mouth-watering!

Here is my recipe with the help of Gina’s Chicken and White Bean Stuffed Peppers.

Ingredients
1/4 Piece of Tomato Bouillon with Chicken Flavor
1/2 Red Bell Pepper
1 TBSP Oil
2 Eggs
1/2 Diced Hot dog Wiener
1 Tomato
2 TBSP Chopped Onion
1 Cup Water
Sour Cream
Cotija Cheese

Directions
1. Heat a pan with the oil to make scrambled eggs.

2. Mix the eggs, onion, wiener, and I added 1/4 of the tomato chopped in a mixing bowl.

When the oil is hot enough add the eggs and cook them well done. Once the eggs are done set aside.

3. Preheat the oven to 350°. Make sure your pepper is vein less and seedless.

4. Use the remaining tomato to make the sauce. Blend tomato, water and tomato bouillon until its sauce like.

Top the pepper with the sauce.

6. Place it in the oven and bake it for 25 minutes.

7. Once the pepper is ready serve it with any side dish you like. Because I love rice with my eggs I served mine with rice and a salad.

8. Also I topped my pepper with sour cream and cotija cheese to give it that Mexican flavor.

Kid Friendly Rainbow Tuna

Because kids love to color…anything that’s colorful grabs their attention.
Our jobs as parents is to learn how to incorporate this lesson
into making their lunch so they are more likely to eat it.

Presenting this quick and easy Rainbow Tuna recipe.
Its kid friendly in case they want to help.
Just make sure you do all the knife chopping :)

Rainbow Tuna

Ingredients
3 Cans Tuna 5oz.
2 TBSP Mayo
1 Can Whole Kernel Corn
1 Medium Orange Bell Pepper
1 1/2 Tomatoes
3 Cups Chopped Lettuce
1 Juicy Jalapeno
Pepper
Salt
* As you might see they go in the order of a rainbow…

Directions
1. Wash your tuna and corn cans before opening
and let them drain in a strainer.

2. Start chomping…you can use the Progressive Chopper
to chop your onion, bell pepper, tomato and jalapeno.
The kids can help with this chopping.
Adults only with a knife chop the lettuce.

3. Once the tuna is well drained put it in a big
mixing bowl add the mayo, salt, and pepper mix.

4. Start adding the corn, bell pepper, tomatoes, lettuce, and jalapenos.

5. Mix until its nice, colorful, and looks mouthwatering :)

6. Serve with bread, crackers, or tortilla chips.

Egg Potato Salad

I tend to have a lot of leftover in my fridge, and sometime I don’t know what to do with the food. So I end up making some weird experiments with my food. Here is a quick breakfast recipe you can make using four simple ingredients.

Ingredients:
5 Eggs
2 Tomatoes
1 TBSP Mayo
Water

Step 1:Boiling perfect eggs.

First you have to boil the water before you put the eggs in. This will cook them better.

Once the water is boiling and ready slide the eggs in carefully. If they crack you will have a lot of protein floating in the water ;) Make sure the eggs are fully covered with water.

If you follow this technique you will end up with your eggs looking like this:

Step 2: Chopping

Start by chopping the tomato first.

Then add the tomatoes and mayo.

Then if you’d like add half an onion for some flavor.

You can serve it like a sandwich or in a wrap.

I served it in a sandwich with a slice of watermelon and some orange juice.

A Quick Wrap with Some Leftover

When you have some leftovers what do you do?  Combine it to make something delicious and edible right ;)  Or hope something delicious comes out.

What I like to do with them is combine and cook them all together, depending on what the leftovers are.  For the kids because they don’t always enjoy what I like, I usually make them some wraps.

Here is a chicken wrap recipe that I made the other day which turned out really good. I still had some leftover chicken so I made some Chicken Spaghetti the next day, but that is another post ;)

Chicken Veggie Wraps

Ingredients:
7 Flour Tortillas
2 Cups Beans
1-2 Shredded Chicken Breast
3 cups Shredded Lettuce
2 Diced Tomatoes
Mayo
Sour Cream
Cheese

Directions:
1. On a flattop grill heat the flour tortillas on medium-low heat.
2. When the tortilla is ready spread some mayo.
3. Start adding the rest of the ingredients: beans, chicken,sour cream, lettuce, tomatoes, and cheese.
4. If you can give it a nice tight wrap, because it will get really messy ;)
5. Serve and enjoy with some fresh orange juice.

Stuffing for The Picky Eater

What do you do when you have a picky eater that is really hungry? He wants something delicious, something he didn’t eat the day before.  What do you make him for dinner? I think I may have the answer for you come take a look.

Before my husband got home from work I was helping my mother in law heat up some leftover meat. When he got home he started asking “what is there to eat? I’m hungry”. I didn’t know what I was going to make him so I started looking through the refrigerator for ideas on what to make, But nothing came to mind.

Thats when I remembered my husband said something that made me think.  He told me that his mom cooks simple foods but she makes them look pretty. So that’s when I decided to make some Stuffed Quesadillas. I made a regular cheese quesadilla but I added some more ingredients to make it look good.

He ate two of them and said they were delicious :)  If you ever want to eat something that is simple but looks fancy give this recipe a try.

Ingredients:
  • Tortillas
  • Mozzarella Cheese
  • Diced Meat or Chicken
  • Chopped Lettuce
  • Sour Cream
  • Chopped Tomato
  • Sliced Avocado

Directions:

  1. Start by making a simple cheese quesadilla on a flat top griddle. Once the cheese is melted add some meat or chicken and let it continue cooking.
  2. When its nice and warm set two quesadillas on a flat plate.
  3. Stuff them with sour cream, lettuce, tomato, and avocado.
  4. Serve and enjoy :)
